Instructions
- Prepare Your Filling: Heat 1 tablespoon of butter in a skillet over medium heat. Sauté onions for 2–3 minutes until softened.
- Add Bell Peppers: Add diced bell peppers and cook for 3–4 minutes until slightly softened. Sprinkle with garlic powder and cumin for extra flavor.
- Cook the Eggs: Pour whisked eggs into the skillet with vegetables. Season with salt and pepper. Cook gently, stirring occasionally, until eggs are just set but still moist. Remove from heat.
- Assemble the Quesadillas: Place a tortilla on a clean surface. Sprinkle cheese on half, add egg mixture, then top with more cheese. Fold the tortilla over the filling.
- Cook the Quesadillas: Heat remaining butter in a skillet. Cook quesadillas for 2–3 minutes per side until golden brown and crispy. Repeat with remaining quesadillas.
- Serve and Garnish: Cut into triangles and serve immediately. Garnish with cilantro, avocado slices, salsa, and sour cream.
