Ingredients
Scale
- 3 lbs Yukon Gold potatoes, diced (no need to peel)
- 1 packet Lipton Onion Soup Mix
- ½ cup low-sodium broth (chicken or vegetable)
- 2 tbsp unsalted butter or olive oil
- 2 garlic cloves, minced (optional but flavorful)
- Salt and pepper to taste
- Fresh parsley, for garnish (optional)
Instructions
- Wash and dice Yukon Gold potatoes into bite-sized pieces.
- Add potatoes to the slow cooker along with Lipton Onion Soup Mix, broth, butter (or oil), and garlic.
- Stir to coat evenly. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours until fork-tender.
- Season with salt and pepper if needed. Garnish with fresh parsley before serving.
Notes
Ingredient Tip: Yukon Golds hold their shape and absorb flavor beautifully. For extra crispy edges, transfer to a baking sheet and broil for 3–5 minutes after slow cooking. Add shredded cheese in the last 15 minutes for a melty finish!
