These Mediterranean Spinach and Feta Cheese Crisps are a quick, flavorful snack or appetizer with a perfect balance of tangy feta, fresh herbs, and zesty lemon. They’re crispy on the outside, tender on the inside, and ready in just 30 minutes.

- 2 cups fresh spinach, finely chopped
- 1 cup crumbled feta cheese (preferably Greek)
- ¼ cup grated Parmesan cheese
- 2 large eggs, lightly beaten
- 2 cloves garlic, minced
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)
- Zest of one lemon
- 1 tablespoon olive oil (plus extra for greasing)
- ¼ teaspoon red pepper flakes (optional)
- ¼ cup almond flour (or all-purpose flour)
- Salt and freshly ground black pepper to taste
Instructions
- Prepare the Spinach: Wash the spinach thoroughly and pat it completely dry with paper towels or use a salad spinner. Chop finely and place in a large mixing bowl.
- Combine the Cheese Components: Add crumbled feta and grated Parmesan to the spinach. Use your fingers to break the feta into small, uniform crumbles for even distribution.
- Add Aromatics and Herbs: Sprinkle in minced garlic, chopped dill, oregano, lemon zest, and red pepper flakes (if using). Season with a pinch of salt and freshly ground black pepper.
- Bind the Mixture: Pour in beaten eggs and olive oil, then add almond flour. Mix thoroughly until well combined. The mixture should be moist but hold together when scooped.
- Form and Bake: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper. Use a tablespoon to portion out the mixture onto the prepared sheet, leaving about 1 inch between each. Flatten slightly to about ¼-inch thickness.
- Bake to Golden Perfection: Bake for 12–15 minutes until edges are golden brown and centers are set. Let cool on the baking sheet for 2–3 minutes before transferring to a wire rack.
Notes
Substitute all-purpose flour for almond flour if needed. For a spicier kick, increase red pepper flakes. Serve warm or at room temperature for best flavor and texture.
