- 4 boneless, skinless chicken breasts (pounded to ¼-inch thickness)
- ½ cup all-purpose flour (gluten-free flour works too)
- 3 lemons (zest of 1, juice of all 3)
- 4 tbsp unsalted butter (or plant-based alternative)
- ¼ cup dry white wine (or chicken broth)
- 2 garlic cloves, minced
- ½ cup heavy cream (or coconut cream)
- 1 tbsp capers (optional)
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Season chicken with salt and pepper, then dredge lightly in flour, shaking off excess.
- Heat 2 tbsp butter in a skillet over medium heat. Sear chicken 3–4 minutes per side until golden and cooked through. Set aside.
- In the same skillet, add remaining butter and garlic. Sauté for 1 minute until fragrant.
- Deglaze with white wine (or broth), scraping up any browned bits. Simmer 2 minutes.
- Add lemon juice, zest, and cream. Stir until smooth. Simmer 3–4 minutes to thicken.
- Return chicken to skillet, spoon sauce over top. Add capers if using.
- Garnish with fresh parsley and serve hot with pasta, rice, or crusty bread.
Notes
For extra brightness, squeeze fresh lemon juice over just before serving. This pairs beautifully with roasted vegetables or garlic mashed potatoes. Make it dairy-free with coconut cream and vegan butter!
