These Lazy Day Lemon Cream Pie Bars are the perfect no-fuss dessert for summer. With a buttery graham cracker crust and a silky citrus filling, they’re bright, tangy, and impossibly creamy — all with minimal effort!

- 1 ½ cups graham cracker crumbs
- 6 tbsp unsalted butter, melted
- 2 tbsp sugar
- 1 can (14 oz) sweetened condensed milk
- ½ cup sour cream
- ½ cup fresh lemon juice
- 1 tbsp lemon zest
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the pan.
- Bake crust for 8–10 minutes, then let cool slightly.
- In another bowl, whisk together sweetened condensed milk, sour cream, lemon juice, zest, and salt until smooth.
- Pour filling over the cooled crust and smooth the top.
- Bake for 15–18 minutes, or until edges are set and center slightly jiggles.
- Cool to room temperature, then chill at least 2 hours before slicing.
Notes
For an extra pop of lemon, top with more zest just before serving. These bars are best served cold and can be made a day ahead — perfect for summer gatherings or lazy afternoons.
