Ingredients

  • 1 ½ cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 2 tbsp sugar
  • 1 can (14 oz) sweetened condensed milk
  • ½ cup sour cream
  • ½ cup fresh lemon juice
  • 1 tbsp lemon zest
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the pan.
  3. Bake crust for 8–10 minutes, then let cool slightly.
  4. In another bowl, whisk together sweetened condensed milk, sour cream, lemon juice, zest, and salt until smooth.
  5. Pour filling over the cooled crust and smooth the top.
  6. Bake for 15–18 minutes, or until edges are set and center slightly jiggles.
  7. Cool to room temperature, then chill at least 2 hours before slicing.

Notes

For an extra pop of lemon, top with more zest just before serving. These bars are best served cold and can be made a day ahead — perfect for summer gatherings or lazy afternoons.
