  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons freshly grated Parmesan cheese (optional, omit for vegan version)
  • 1/4 teaspoon red pepper flakes (optional, for heat)

Instructions

  1. Thoroughly wash spinach leaves under cold water and dry completely using a salad spinner and clean towels. Let sit on towels for 20 minutes for extra dryness.
  2. Preheat oven to 325°F (165°C) and line two large baking sheets with parchment paper.
  3. Place spinach leaves in a large mixing bowl. Drizzle with olive oil and gently massage with hands or tongs to coat evenly.
  4. In a small bowl, mix Italian herb blend, garlic powder, onion powder, salt, pepper, Parmesan (if using), and red pepper flakes. Sprinkle over spinach and toss to coat evenly.
  5. Arrange spinach in a single layer on prepared baking sheets, ensuring leaves do not overlap. Leave about 1/4 inch of space between each.
  6. Bake for 7 minutes, rotate pans, then bake an additional 5–8 minutes. Watch closely after 10 minutes to avoid burning. Chips should shrink and become crisp.
  7. Cool chips on baking sheets for 2–3 minutes before transferring to a serving bowl. Enjoy immediately for best texture and flavor.

Notes

Moisture is the enemy! Thorough drying is key. Use fresh spinach, low oven temps, and light, even oil application for perfectly crisp results.
