- 1 cup Medjool dates (pitted and chopped)
- 1 large orange (zest and juice)
- 1 ½ cups almond flour (or oat flour for nut-free)
- ½ cup maple syrup (or honey)
- 3 eggs (room temperature or flax eggs)
- 1 tsp baking soda
- 1 tsp vanilla extract
- Pinch of sea salt
- Optional Garnish:
- Sliced almonds
- Orange glaze (powdered sugar + orange juice)
Instructions
- Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
- In a mixing bowl, combine chopped dates, orange zest, and juice. Let sit 5 minutes to soften.
- Add almond flour, maple syrup, eggs, baking soda, vanilla, and salt. Stir until fully combined.
- Pour batter into prepared loaf pan. Smooth the top.
- Sprinkle sliced almonds on top if using.
- Bake for 35–40 minutes or until a toothpick comes out clean.
- Let cool before drizzling with optional orange glaze. Slice and serve.
Notes
For a vegan-friendly version, swap eggs with flax eggs (1 tbsp ground flax + 3 tbsp water per egg). Add chopped walnuts or dark chocolate chips for extra texture and indulgence.
