  • 1 cup Medjool dates (pitted and chopped)
  • 1 large orange (zest and juice)
  • 1 ½ cups almond flour (or oat flour for nut-free)
  • ½ cup maple syrup (or honey)
  • 3 eggs (room temperature or flax eggs)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • Optional Garnish:
  • Sliced almonds
  • Orange glaze (powdered sugar + orange juice)

Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
  2. In a mixing bowl, combine chopped dates, orange zest, and juice. Let sit 5 minutes to soften.
  3. Add almond flour, maple syrup, eggs, baking soda, vanilla, and salt. Stir until fully combined.
  4. Pour batter into prepared loaf pan. Smooth the top.
  5. Sprinkle sliced almonds on top if using.
  6. Bake for 35–40 minutes or until a toothpick comes out clean.
  7. Let cool before drizzling with optional orange glaze. Slice and serve.
