Ingredients
Scale
- 2 lbs baby potatoes, halved
- ⅓ cup olive oil (or melted butter)
- 1 packet ranch seasoning mix (or homemade: 2 tbsp dried dill, 1 tbsp garlic powder, 1 tsp onion powder, ½ tsp black pepper)
- 1 cup shredded cheddar cheese (optional)
- ½ cup crispy turkey bacon bits (or coconut bacon for vegan)
- 1 tsp smoked paprika
- Optional: Fresh chives or lemon juice for garnish
Instructions
- Prep Potatoes: Wash and halve potatoes. Toss with olive oil in a mixing bowl.
- Season: Sprinkle with ranch seasoning and smoked paprika. Mix to coat evenly.
- Slow Cook: Transfer to a crock pot. Cook on low for 4 hours or high for 2.5 hours. Stir once halfway through if on high.
- Finish & Serve: Fold in cheese and bacon bits during the last 15 minutes of cooking. Serve warm, garnished with chives or lemon juice if desired.
Notes
Tip: Want extra crisp? Broil cooked potatoes on a baking sheet for 3–5 minutes. For a fun twist, stuff leftovers into tacos or sauté with eggs for a next-day hash.
