- Create the Aromatic Base: Heat a large, heavy-bottomed soup pot over medium heat. Add ¼ cup of the vegetable broth and bring to a simmer. Add onions and cook for 3-4 minutes until translucent. Add garlic and cook for another 30 seconds until fragrant, being careful not to brown it.
- Build the Soup Base: Add celery, carrots, and bell peppers to the pot. Cook for 5 minutes, stirring occasionally. The vegetables should soften slightly but maintain their structure. Add diced tomatoes with their juice, stirring to incorporate all flavors.
- Add Cabbage and Remaining Ingredients: Add the chopped cabbage to the pot along with green beans, remaining vegetable broth, Italian seasoning, paprika, black pepper, and bay leaves. Stir well to combine all ingredients. If your pot seems too full, add cabbage in batches as it wilts down to make room for more.
- Simmer to Perfection: Bring the soup to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes, or until all vegetables are tender but not mushy. Check occasionally and add a bit more broth if needed.
