  • 24 Ritz crackers

  • 24 Rolo caramel candies, unwrapped

  • 1 cup semi-sweet chocolate chips

  • 1 tablespoon vegetable oil

  1. Preheat Oven:

    • Set your oven to 350°F (175°C).

  2. Assemble the Cookies:

    • Place 12 Ritz crackers on a baking sheet lined with parchment paper, with the flat side facing up.

    • Top each cracker with a Rolo candy.

  3. Bake:

    • Bake in the preheated oven for 3–5 minutes, or until the Rolos have softened but not completely melted.

  4. Create Sandwiches:

    • Remove from the oven and immediately top each with another Ritz cracker, pressing down gently to create a sandwich.

  5. Cool:

    • Allow the sandwiches to cool completely on the baking sheet.

  6. Prepare Chocolate Coating:

    • In a microwave-safe bowl, combine 1 cup semi-sweet chocolate chips and 1 tablespoon vegetable oil.

    • Microwave in 30-second intervals, stirring after each, until the chocolate is fully melted and smooth.

  7. Dip and Decorate:

    • Dip each cooled sandwich halfway into the melted chocolate, allowing any excess to drip off.

    • Place the dipped cookies on a parchment-lined tray.
